My husband makes a BBQ Chicken Boboli that’s really good. However, that’s the ONLY kind of Boboli he makes and we’ve been together 15 years so you do the math. Last night was Boboli night and I decided to mix it up a bit. This led me to think of something different and now that I’m actually documenting my little experiments on this here blog I thought I would give this a shot and it worked!
1 Boboli
1 small container of Sabra Classic Hummus
1 small tomato
1 tbsp feta cheese
6 Kalamata Olives
1 lemon
Preheat oven to 415 degrees. Spread hummus on Boboli, sprinkle with chopped tomatoes, chopped olives and feta cheese. Bake for 12 – 15 minutes on cooking tray and another 3 – 5 minutes on the rack for more crisp. Remove from the oven and let cool for about 5 minutes. Drizzle with lemon.
I used feta cheese with a tomato and basil accent and sprinkled a dab of my husband’s pizza cheese over the top because it was right there. I probably didn’t need the pizza cheese, but I’m a pizza gal and couldn’t help myself.
I cannot wait to try some grilled chicken on this next!

Remember the Turkey Vegetable Platter a couple posts back? It was my Pinterest – Pinspiration Weekly Wrap-Up. I had to try it! Even though it didn’t turn out exactly how I would have liked, it was still so stinkin cute and better even, the guests loved it.
Here is my attempt…
Hoping this Thanksgiving weekend brings you rest and relaxation!

I am always amazed by the ingenious creations by people thinking outside the box! For example, look at these – your cell phone used as a nightlight. Genius! Just enough light to allow you to get what you need without having to possibly wake someone up. I can’t tell you how many times I’ve used my phone to guide me through reaching for the remote in the middle of the night or getting me through a dark room for those times I turned off the lamp at the opposite end of the room and have to navigate my way through – yes, I’ve done it.
I’m starting to wonder if I should have named this Wednesday theme
– Why Didn’t I Think of That? –

This week on What Were They Thinking – Wednesday, I am going to have to write about Miley Cyrus and her nude video. However, let this not be an interpretation that I didn’t like what she did. I did like the artistic part of what she did and maybe that’s why I am wondering what she was thinking.
Let’s back track, shall we?
After her performance at the VMAs I was okay with it. I felt it was Madonna 30 years later. She’s making a statement. Big whoop.
Now the video? Is it really necessary?
Isn’t this the definition of over board?
What do you think?
