No-Bake Watermelon Cake!

I need to get more fruits and vegetables in my little guy. When it comes to fruits there are very few he actually eats. Watermelon is one of them. So when I saw this Watermelon Cake I thought it might be a good shot that he would eat it. In addition, I could try some strawberries. Here’s what you need –

Watermelon Cake

1 Watermelon
Strawberries, halved and quartered
Cool Whip
Sliced almonds

First, cut stems off strawberries, cut them in half and quarter them. Clean with soap and water. I enlisted my little guy and he was all for it, what a great help he has become! Next, cut a cylinder out of the watermelon (instead of using the whole watermelon I thought I would try a small one first and it was a good thing because the watermelon we picked was not very tasty).

Once you have the watermelon into the shape of a cylinder frost it with the Cool Whip

Not only did my little guy help with slicing and cleaning the strawberries as well as icing the watermelon he was also the camera guy – I think I found myself a new photographer!

I write for Social Media Girlfriends and last Wednesday we had Paul McCullough on the show teaching us how to make Cherry Tomato Puffs. This was my first time with puff pastry! So fun and SO, SO yummy! I have always wanted to try puff pastry, but have never gotten around to it. I can cook, but I’m not great at it. For example, just a couple of years ago I baked my very first pumpkin pie and instead of a dough crust I used a graham cracker crust and why? Because that was the pie crust sitting next to the pumpkin pie can in the isle at the supermarket. Needless to say the kitchen is not my strongest, but this experience inspired me!

So I had to share although I think I was more excited about the puff pastry than the recipe itself. Luckily, I absolutely LOVE tomatoes and I cannot wait to get Roma-Therapy so I can make other recipes from it and share them on the blog! Here is my rendition of –

Cherry Tomato Puffs

2 sheets of Pepperidge Farm Puff Pastry, thawed and unfolded
1 pint cherry tomatoes
1 egg beaten
Maldon Salt
Black Pepper

Place puff pastry on floured work surface and use 2-3 inch round cookie cutter to cut out 2 pastry circles for each tomato – I picked the first cookie cutter in my tub of cooking cutters because I was in a hurry. LOOK at the CUTE little design that happened because of the edges of the cookie cutter.

Brush edge of pastry round with water then place tomato in center. Top tomato with second pastry round and gently pinch edges of both rounds together to ensure a good seal – Here I added some different cheese in each puff; feta cheese, havarti cheese and mozzarella.

Lightly brush each puff with a beaten egg and sprinkle with Maldon salt and pepper. Bake for 12-15 minutes until well puffed and golden.

I am so excited about this puff pastry that I searched for more puff pastry recipes only to find the Pepperidge Farm website and all their puff pastry recipes. Yum!

I think my family is in trouble!

Christmas Wreath Cake

I love the holiday season. Most people seem friendlier, warmer and just down right jolly. Our lovely neighbors invited our family to a holiday block party. On the invitation, it asked that we bring a plate of goodies. I wanted to do it up with something extra special because these are some very sweet people.

Introducing the Betty Crocker Christmas Wreath Cake –

What You Need

1 box Betty Crocker® SuperMoist® white cake mix – water, vegetable oil and eggs called for on cake mix box
 
Red and green food color
 
1 container (12 oz) Betty Crocker® Whipped fluffy white frosting
 
Betty Crocker® Decorating Decors® red, green and white candy sprinkles

Into the oven it went. Then it was time for the frosting.

When it came time for the green frosting my husband was a little enchanted with my artistic baking abilities. He watched over with the cutest curiosity. He actually suggested I darken the green frosting after the first layer of green to add depth to the color of the cake. It would appear he’s not that much of a Neanderthal after all.

At the neighbor’s house the cake was a hit. It came out super moist and was super yummy. It looks different from the Betty Crocker picture above, but it was fun to do and I can’t wait to try something like this again.

Here is my cake in all it’s glory – I love the Christmas tree background.
