Merry Christmas!
These last few weeks have been spent hustling and bustling throughout the holiday season. However, I managed to squeeze in some baking with a recipe that I got from Pinterest! I love My Pinterest! This time I made Banana Chocolate Chip Muffins and discovered the MASSIVE difference in baking when using a Kitchen-Aid mixer!
A few weeks ago I took the mixer out from storage to make Sweet Hawaiian Bread, but that didn’t work out because I did something wrong with the yeast. Hmm… maybe that’s why it was in storage in the first place.
Thankfully, I left the mixer on the counter and this baking escapade led me to making these Banana Chocolate Chip Muffins using the mixer and the difference was truly AMAZING. I could not believe the consistency the mixer mixed the batter compared to me doing it by hand. Now, I am so excited to try something else!
This recipe came from Princess Pinky Girl and it was delicious and a hit with my Christmas guests! Thank you for your scrumptious recipe because it is now a staple in my book!

When I saw this recipe I heard the avocado calling me. I knew I would make this. It was just a matter of time. Enter summer and my new camera guy!
This recipe was originally for a sandwich and the ingredients were mashed up and placed on whole wheat bread. I had it both ways and either way, it is yummy! I had to split the recipe from the Original Recipe by Two Peas & Their Pod because I am the only one in the house who will eat this. The first day I had it as a salad.
Here is what you are going to need –
1/2 Can of Chickpeas
1 Avocado
1 Green Onion
1 T Chopped Cilantro
1/4 Cup of Feta Cheese
1 Lime
*Salt and pepper to taste
The next day I used the rest of the chickpeas and made my second batch. I had the first half in a sandwich and the rest in my salad last night for dinner.
I can’t wait to make it again as an alternative to guacamole.

I’m finding myself using Pinterest a lot for recipes. My brain seems to adapt to this format very well. I am always referring to it to try something new. We just returned from the store and got all the ingredients to make the following dishes. Currently I am in a dilemma about which chickpea dish to make first. I am thinking it’s going to be the avocado dish!

I need to get more fruits and vegetables in my little guy. When it comes to fruits there are very few he actually eats. Watermelon is one of them. So when I saw this Watermelon Cake I thought it might be a good shot that he would eat it. In addition, I could try some strawberries. Here’s what you need –
1 Watermelon
Strawberries, halved and quartered
Cool Whip
Sliced almonds
First, cut stems off strawberries, cut them in half and quarter them. Clean with soap and water. I enlisted my little guy and he was all for it, what a great help he has become! Next, cut a cylinder out of the watermelon (instead of using the whole watermelon I thought I would try a small one first and it was a good thing because the watermelon we picked was not very tasty).

Once you have the watermelon into the shape of a cylinder frost it with the Cool Whip
We added strawberries and almonds
Ta-Da!!
Not only did my little guy help with slicing and cleaning the strawberries as well as icing the watermelon he was also the camera guy – I think I found myself a new photographer!
